Paleo Berry Plantain Pancakes

This is a great tasting nut, gluten and grain-free pancake that is also suitable for those who need to eat lower amine foods. 

Vary the berries and spices to create other variations of these pancakes.

Paleo Berry Plantain Pancakes

Ingredients

Recipe

  • 3 tablespoon(s) Coconut oil (or other appropriate oil)
  • 2 whole green Plantains
  • 4 whole Eggs
  • 2 teaspoon(s) Vanilla
  • 1/8 teaspoon(s) Salt
  • 1/2 teaspoon(s) Baking soda
  • 1 teaspoon(s) Cinnamon
  • 1/2 teaspoon(s) Cardamom
  • 1 cup(s) Blueberries
  • Extra oil for frying

Paleo Berry Plantain Pancakes Directions

  1. Peel plaintains and combine with eggs in a food processor or blender.
  2. Add the rest of the ingredients, except berries, and process for 1-3 minutes until the batter is mostly smooth.  Stir in berries.  (It will be thicker than normal pancake batter.)
  3. Heat 1 Tbsp of oil in a frying pan or griddle over medium high heat. Pour batter into the pan.
  4. Cook for 4-5 minutes on the first side until little bubbles appear, then flip and cook 1 1/2 to 2 minutes on the other side.
