Scrub (or peel if very dirty), beets after removing root from leaf material. Chop into approx. 1/2 inch pieces and place into 1/2 gal jar, preferrably probiotic specialty jar. Fill the jar with water, add salt and stir.May add starter, optional. Cover with special lid and store in cool area of kitchen, out of sun, and cover with a towel.
Wait for one week, and watch the color of the water turn a deep purple color. If using golden beets, the color will be a beautiful golden color. May lengthen wait time, taste to preference.
Transfer to flip-top bottle, if available but not necessary.
To make Kvass, may use regular 1/2 gal. mason jar with lid, or for a more foolproof product try the probiotic jar - www.probioticjar.com/. there will be no chance of mold or any other bacteria infiltrating.
