Coconut Bark

Seasons: 

Very satisfying healthy alternative for someone still dealing with a sweet tooth, or someone just wanting a little dessert. Tastes like white chocolate. May be embellished with nuts, dried fruit, raw chocolate bits (use your imagination).

Ingredients

Recipe

  • Piece(s) (optional) dark chocolate or carob chips melted, sprouted nuts, chopped, or dried fruit
  • 2 cup(s) unsweetened coconut flakes or chips
  • 1/2 cup(s) cold-pressed coconut oil
  • 2 tablespoon(s) raw honey
  • 1/2 teaspoon(s) vanilla extract

Coconut Bark Directions

  1. Place Shredded coconut, oil, honey and vanilla in food processor and blend until smooth.
  2. Line a glass pan or cookie sheet with parchment paper and spread mixture evenly to about 1/4" thickness.
  3. Melt chocolate chips in a double boiler over the stove. Drizzle or spread chocolate over the coconut mixture and sprinkle with sprouted nuts or dried fruit as desired.
  4. Transfer to the freezer and leave to set. After about 45 minutes, remove and break into small pieces. Serve right away or store in a container in refridgerator for  future use.
  5. In lieu of melting chocolate and spreading over top of mixture, for a faster recipe and alternative, may just sprinkle with raw chocolate bits. Be creative.
