Ingredients

  • 1 teaspoon(s) Tallow
  • 12 ounce(s) Chicken Stock
  • 2 pinch(es) Sea Salt
  • 1/2 cup(s) Coconut Oil
  • 8 ounce(s) Coconut milk
  • 1 whole onion
  • 2 part(s) Garlic cloves
  • 1 pinch(es) Pepper
  • 1 whole Broccoli
  • 1 whole Cauliflower

CauliBroc Soup Directions

  1. Choose a large pot, add tallow and coconut oil and simmer until melted.
  2. Add chopped onion, garlic, salt and pepper - sautee for a few minutes until softened.
  3. Add the chopped brocolli and cauliflower, chicken stock (I normally make this separately and store it in the freezer in mason jars until I need it) and the coconut milk.
  4. Cover and allow to cook on low for about 45 minutes, check on it regularly.
  5. Blend with a hand blender after it's cooked, I usually allow it to cool a little too so I don't get hot splashes.
  6. I love to store portions in the freezer in mason jars and put in the vitamix on the hot soup setting when I feel like it.
