Place chicken into large roasting pan with a lid.
Pour olive oil over chicken.
Squeeze fresh lemon juice over chicken.
Season with Crushed Garlic, Oregano, Thyme, Salt & Pepper.
Cook at 400 degrees for 30 mins uncovered to brown the meat.
Place vegatables around the chicken.
Turn oven down to 350 degrees for approx. 1 hour (for 4 to 5 lbs)
Remove from oven and allow to rest for 10 mins.
Carve and serve straight out of the pan.
Save bones for bone broth (optional).
