Greek Chicken

Greek Chicken

Ingredients

For 8 Person(s)

Recipe

  • 5 pound(s) Free-range Organic Chicken
  • 1/2 cup(s) Cold Pressed Organic Olive Oil
  • 1 Large Organic Lemon
  • 3 Cloves Organic Garlic
  • 1 teaspoon(s) Organic Thyme (more if desired)
  • 1 tablespoon(s) Organic Oregano (more if desired)
  • 1 teaspoon(s) Sea Salt (more if desired)
  • 1 teaspoon(s) Pepper (more if desired)
  • 1 teaspoon(s) Large Organic Onion diced
  • 8 Organic Celery stalks, including the leafy tops,cut in 2 inch pcs
  • 8 Organic Carrots, cut in2 inch pcs
  • 8 Organic small Red Potatoes
  • 1/2 pound(s) Organic Green Beans (optional)

Greek Chicken Directions

  1. Place chicken into large roasting pan with a lid.
  2. Pour olive oil over chicken.
  3. Squeeze fresh lemon juice over chicken.
  4. Season with Crushed Garlic, Oregano, Thyme, Salt & Pepper.
  5. Cook at 400 degrees for 30 mins uncovered to brown the meat.
  6. Place vegatables around the chicken.
  7. Turn oven down to 350 degrees for approx. 1 hour (for 4 to 5 lbs)
  8. Remove from oven and allow to rest for 10 mins.
  9. Carve and serve straight out of the pan.
  10. Save bones for bone broth (optional).
