Greek Leg of Lamb Directions
Place leg of lamb into large roasting pan with a lid.
Pour olive oil over lamb
Pierce the meat slightly and insert whole cloves of garilc.
Squeeze fresh lemon juice over meat.
Season with Oregano, Thyme, Salt & Pepper.
Cook at 400 degrees for 30 mins uncovered to brown the meat.
Place vegatables around the leg of lamb.
Turn oven down to 350 degrees for approx. 1 hour (for a 6 to 7 lb leg of lamb) or until meat thermometer reads 145-150 degrees.be careful not to touch the bone with the thermometer.
