Quick & easy chicken recipe, using store cupboard ingredients. By adding a little sweetness and crunch, it gives some texture and flavour to what can often be a dry and tasteless protein source.
Remove chicken from fridge to allow to come up to room temperature slightly. Pre-heat oven to 180*C
Pour boiling water over apricots and leave to steep.
spread hazlenuts out on a tray and roast in the oven for 8-10 mins.
Combine all ingredients (including nuts and apricots) in a food processor and blend until combined. The nuts may still be chunky – but that‘s nice!
Lay out chicken breasts on a silicone sheet or a greased foil lined baking tray. Divide mixture across the 6 fillets and spread out to cover the tops with the back of a spoon.
Bake for 25 – 30 mins – check inside is cooked (white meat not pink)
