Green Bean Miso Dip
This is a very light dip, a great afternoon pick-me-up, packed with phyto-nutrients! Serve with your favorite veggie sticks and enjoy as a delicious, easily digestible snack between meals.

- 2 tablespoon(s) olive or coconut oil
- 1/4 cup(s) vegetable broth or water (or more)
- 1/2 cup(s) chopped white onion
- 1 1/2 cup(s) green beans, cleaned and cut into 1-inch pieces
- 1/2 teaspoon(s) sea salt
- 2 tablespoon(s) freshly squeezed lemon juice
- 1 tablespoon(s) unpasteurized chick pea miso
- 2 tablespoon(s) nutritional yeast
- 1/3 cup(s) chopped Italian parsley
Green Bean Miso Dip Directions
- Gently sauté the onions in the oil and add then add the green beans. Add a little broth or water as you continue to cook over medium heat. The onions should be soft and the green beans should be soft with a bit of crunch. Stir in the salt. Take off heat and allow to cool down a few minutes.
- Add the mixture to a blender, and then add the lemon juice, miso, nutritional yeast and parsley. Blend until smooth.
