- 2 cup(s) baby spinach, washed and dried
- 1 cup(s) water (1/2 cup or less for a dip)
- 2 to 3 cloves roasted garlic or 1 clove raw
- 1 teaspoon(s) lemon juice (or more to taste)
- 1 pinch(es) sea salt
- 1 ripe avocado
- 2 tablespoon(s) crushed dry-roasted hazelnuts, lightly toasted pine nuts or sunflower seeds
Cold Spinach Soup or Dip Directions
- In a blender, place the spinach, water, garlic, lemon juice and salt. Pack the spinach leaves down and then blend until smooth, scraping down sides as necessary.
- Spoon the avocado out of the skin and into the blender and process again until smooth.
- Taste and add additional salt, garlic, or lemon juice if necessary.
- Divide into 4 equal portions and garnish with nuts.
